I lg. whole frier with skin on; rinse.
Place in pot to fit loosly, Cover with cold water, bring to boil.........drain off, refill again with cold water;
add; salt,pepper, 2 bay leaves, sprig celery top, garlic clove and 1/4 quartered onion..[whole not chopped] ...I put all the veg. inside the cavity of whole chicken.....bring to boil again, cover , reduce heat to bare simmer...cook for 30 mins....remove from burner and then DO NOT PEEK....OR remove lid...let stand until cool to touch...
Take cooled chicken out of pot, save broth. Take skin off and discard with veggies... remove both breasts in 2 whole pieces .
[you should have 2 lg.halves]....then I take all the rest of meat...thighs,legs wings and shred.
You will be really surprised at the flavor of this chicken meat...the bay leaves impart a wonderful flavor. I use this meat in a zillion different ways. When cooled the breast meat can be sliced for sandwiches or Hot chicken Sandwich with fresh cooked veggie of choice...the shredded thigh and leg meat can be eaten alone or made into chicken enchilada's , or top for a tasty salad. I let the broth stand in fridge and then take the fatty layer off the top [which comes off easily] and use for gravy for the hot chick. sandwiches[ reduce some in skillet until thickened [add a tbl. BUTTER]....wonderful gravy and very little fat,but huge flavor..
Again so easy and fast to do.........yet there is no end to the ways you can make this MOIST chicken.......the broth is wonderful and can be used for anything calling for homemade chicken broth.
